HAPPY CHANNUKAH


Santa may still be making his list and checking it twice but Channukah is already here!


My new stove arrived late yesterday afternoon, just in time to fry up some holiday potato latkes (pancakes.) They are traditionally served with apple sauce, sour cream or both!
POTATO LATKES
3 cups of shredded potatoes (about 3 large potatoes)
2 eggs, beaten
1/3 cup finely chopped onion
1 1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
About 3 Tablespoon flour
Oil for frying

Mix everything together, except the flour and oil.
Pour about 1/4-1/2-inch of oil in a large skillet and heat until hot. Quickly mix flour into potato mixture, then use a large serving spoon to drop mixture into hot oil. Flatten slightly with a spatula. Fry until brown and crispy, then turn and cook other side. Drain on paper toweling. Serve at once or keep warm in a 200 degree. Can be refrigerated and reheated in 400 degree oven. Serve with apple sauce, sour cream or both!

Your pancakes look scrumptous Barbara! Love the idea of the Ice Sculptures, I think they may be the best affordable decorating idea yet, you could adapt them to all sorts of celebrations, birthdays with tiny hearts frozen into the sculptures...my minds working overtime...

The ice sculptures would do great here!! I just picked up a Rose mold for a cake or jello etc. that would be neat for a sculpture too. I don't know where you find the time to keep us updated, but it's greatly appreciated. Hopefully you can take some time to enjoy the holidays.

Oooh! Those potato pancakes look so good. We have friends celebrating Channukah and we love helping them celebrate each year. They love to include everyone and it is always with such joy.
The ice sculptures are beautiful. I once had all white or had browns and golds and coppers...this year the kids screamed, "RED AND WHITE AND GREEN!!!" So I was done in. : )
